More herding
We have a beautiful day here. Lower 70's so Dad has been busy in the yard. We like these days since he just leaves the backdoor open for us. Mom calls us "inside outside dogs".

Saturday Herding..
We had a good day of herding today. Gus was like a pro always in the right place. Callie still goes 100 mph but keeps them all together and brings them back to Mom. Louie had moments of brilliance but still needs a bit of practice to make a master herder...

Downtime..
Well the Texas weather has changed again.. It is sprinkling this am. Perhaps that does mean that Spring is on the way... What is it the say about showers and flowers? Or is it mud and dirty paws?

Saturday fun..
We have a beautiful day again today.. Hopefully it will last the rest of the weekend. We have been helping Dad in the backyard and in the garden. We can't figure out why we can't play in that nice soft dirt...

Egg Cake - Eierkuchen
Eierkuchen
These are approximate measurement. Sis was trying to build the recipe while Mom was cooking..
Fried bacon pieces
12 eggs
1.5 tsp baking powder
3/4 cup milk
3 cups flour
1 can peaches
Crack the eggs into a bowl, add milk and baking powder and flour
Mix well. Mom uses a whisk, Sis's boyfriend says he would use a mixer.
The batter should be the consistency of pancake batter if not add a bit more milk or flour.
Put fried bacon into cast iron skillet.
Pour in batter..
Mix batter until is looks like scrambled eggs still a bit wet..
Smooth it down and let it cook with a lid on for a bit. Shake it to keep it from sticking or use the pancake flipper to lossen it.
Shake the cake out onto a plate.. This is the hard part sometime is falls apart but it still tastes great..
Pour a little more bacon grease into the skillet and flip the cake back in to the pan fried side up.. Let it cook till the bottom is nice and brown.
Ya the finished cake.. Serve with peaches
Grandma always fried it in a pan but one of Mom's older neighbor ladies would just bake it in the cast iron skillet in the oven. 350 until done..

Helping Mom in the kitchen..
Mom was busy in the kitchen on Sunday making brunch for the kids.. She was busy making a German Egg Cake with bacon.. It sure smelt yummy in the kitchen..
Ok Mom thought she would post the chicken fried steak recipe although Mom has a problem with measuring anything she will give you the drift of it.
1. Get some cube steak.
2. Egg mixture - 4 or 5 eggs in a bowl - whip them up with a bit of milk..
3. Flour mixture - equal parts of all purpose flour and pancake mix. (The pancake mix seems to make the batter a bit fluffy)
Salt, Pepper, Mrs Dash, (whatever seasoning you like) put this right into the flour mixture.
4. Dip cube steak into the eggs then into the flour, back in the eggs and then back into the flour patting it so it is quite thick..
5. Drop this into a cast iron skillet with a pretty deep layer of hot grease. (Cast iron seems to get hot enough and makes the coating a bit crispier than other pans)
6. Fry till done, flipping frequently..
I usually serve this with mashed potatoes, white gravy and a vegie of your choice..
As you can see it is hard to duplicate Mom's cooking since she doesn't use those measuring cups much... Her Grandmother taught her how to cook when she was young and Grandma didn't even own a measuring cup..
